This easy Whole30 slow cooker recipe makes cooking beef and broccoli at home so simple. It comes together in the crock pot incredibly fast, and is a great meal prep recipe or weeknight meal because you just dump the ingredients, and come back later to a healthy, Paleo, keto and Whole30 broccoli beef waiting for you in the slow cooker! It’s a perfect low carb meal that you can easily add extra veggies to!

Whole30 Slow Cooker Beef and Broccoli Ingredients

This is a super simple recipe to throw together, and most ingredients are common pantry staples for paleo and Whole30 eaters, or they’re really easy to find! You’ll need coconut aminos and beef broth, minced garlic and minced ginger, and toasted sesame oil and white wine vinegar.

The other ingredients (besides the fresh veggies and beef) are simple spices, along with Chinese 5 Spice which, if you aren’t familiar, makes such a huge difference in Chinese and Asian-inspired recipes. This can be found in most grocery stores either in the spice area or international aisle. Or, of course, you can grab it off of Amazon.

Arrowroot flour is used to thicken the slow cooker beef and broccoli sauce at the end of cooking. You could use tapioca flour instead if that’s what you have available. The beef that’s used here can be a variety of cuts such as flank or strip steak, and as the slow cooker is really an ideal method for cooking tougher cuts of meat, beef roasts work too. Just make sure for all of these cut options, you slice against the grain.

How to Make This Whole30 Slow Cooker Recipe

When getting the slow cooker beef and broccoli started in the slow cooker, you’ll first chop the onion and slice the beef. You can wait to cut up the broccoli until the slow cooker is almost finished, or you can do it beforehand and put it back into the refrigerator, as the broccoli isn’t added until the very end.

Then you’ll just add all of the ingredients, except for the broccoli and arrowroot, into the slow cooker and stir to combine really well so the liquid is incorporated with the spices, and with the beef. After that, you’ll simply cover the slow cooker Whole30 beef and broccoli with the lid, and cook on high for 3-4 hours, or on low for about 6 hours. The beef may cook quicker if it’s very thinly sliced.

An optional step here is to first sear the beef in a hot skillet with a few tablespoons of oil for about 2 minutes per side. This does take longer, and adds an additional dish to wash, but it helps the beef hold up better in strips in the slow cooker and it also adds a deeper flavor to the recipe. It’s great either way, it just depends on what you have available for time!

To finish the recipe, the last step is to dissolve the arrowroot in a bit of water using a small dish, I even use a small measuring cup sometimes. You’ll dissolve the arrowroot to create a slurry, and then pour that into the slow cooker. This ensures that the sauce thickens evenly and the flour doesn’t clump up.

Then stir to combine the arrowroot in with the sauce, add in the broccoli florets and stir again. Put the lid back on and cook for about 15 minutes to thicken the sauce and soften the broccoli. If you want a thicker sauce, add in an additional half a tablespoon at a time until it’s at the thickness you want, and if you want the broccoli to be softer, give it another 10 minutes!

  1. Add all ingredients into your slow cooker except for the arrowroot and broccoli
  2. Stir well to combine and cover. Cook on low for 6 hours or on high for 3-4 hours
  3. Once the beef is done, pour in the arrowroot that’s been dissolved in the water. Stir to combine in with the sauce and then add in the broccoli and stir to combine
  4. Cover with the lid again, turn down to low if it isn’t on it already, and cook for an additional 10-15 minutes to allow the sauce to thicken and the broccoli to soften. If you want your broccoli softer than fork tender, you may need to leave it in for a few more minutes

Notes

  • You can sear the steak strips in a hot skillet over medium heat with a bit of olive or avocado oil for about 2 minutes per side before adding it to the slow cooker. This is an optional step but it does help the beef hold together will and adds an additional depth of flavor.
  • You may need to add more arrowroot flour depending on how much broccoli you used and if it releases more excess liquid (using frozen broccoli would do this as well). Simply add in a bit more until the sauce is the thickness you desire. When using arrowroot, if a sauce ever gets too thick, you can thin it again by adding a bit more water.
  • The beef may cook more quickly if it was very thinly sliced
